Rainbow Cupcakes with Unicorn Poop Frosting
Throwing a party for a kid can get pretty expensive, so to help cut the cost, and keep the budget low, we opted to make Rainbow Cupcakes with Unicorn Poop Frosting instead of buying an expensive store bought cake. The best part, I had all the ingredients needed on hand, and the kids really had fun decorating the Unicorn Poop…lol
Rainbow Cupcakes
All you need is your favorite cake mix and few food color gels, you can use a water based food coloring, but the colors are just not as bright.
After you have made your cake batter, separate the batter into 6 bowls. I used clear plastic cups, they made it easier to measure out, and I could ensure that all of the coloring was mixed all the way through.
Place your cupcake liners in your tray. If you want the rainbow to be a surprise, then use a foil liner or dark colored. My daughter opted to use rainbow colored liners, so I just doubled them so the color wouldn’t bleed through.
Start pouring your colored batter in each liner, one color at a time. With 6 colors, 1 tablespoon per color seemed to work perfect.
Continue adding your colors 1 at a time.
After adding all the colors, use a toothpick to give it ONE quick swirl.
Then bake according to your recipes directions.
Let them cool completely before decorating.
Unicorn Poop Frosting
For the frosting, you will need your favorite frosting (except Chocolate… It doesn’t work), your gel colors and a piping bag or zip lock bag.
After you have mixed all of your colors, place your piping bag into a tall glass. Carefully add one color at a time to the sides of the bag, trying to not mix them to much.
Since I use 5 colors, I added the final color to the center.
After placing your colors in your bag, carefully lift your bag out of your cup and push your frosting down to the tip. I didn’t have a large enough frosting tip, so I just snipped the end of the bag with a pair of scissors.
Start pipping your cooled cupcakes, start on the outside of the cupcake, and work your way towards the center.
Then, let the kids imagination go wild. Everyone know that Unicorn Poop has sparkles and glitter and all things sparkly in it.
Finish it off on a super cute cupcake stand, and let every “ohh and awww” over your awesome Rainbow Cupcakes with Unicorn Poop Frosting!
