If you follow me on Facebook, then you may know I had a bit of a cancer scare this past week. It put things in prospective, and I have made a decision to eat more healthy. But, I have a BIG sweet tooth, so giving up all things Cotton Candy, is hard.
So I grabbed my $10 Coupon to Vitacost, and was on a mission to save money, and come up with some things that were both healthy, and sweet. If you haven’t checked out last weeks recipe for Energy Bites, they are AWESOME!
So, I wanted fudge…. BAD! So I decided to make a Healthy Fudge! And it turned out some yummy! I had a side of “Banana” Ice Cream (Info on that is in the video below) with it, and my sweet tooth was satisfied… for now…lol
Healthy Fudge Recipe
- 1 Cup Pitted Dates
- ½ Cup Unsalted Almonds
- ¼ Cup Unsalted Walnuts
- ½ Cup Unsweetened Cocoa Powder divided in half
- 4 Tbsp Almond Butter
- 2 Ripe Bananas
- 1 Tbsp Vanilla
- Place dates in a bowl of water and allow them to soak for 30-45 minutes.
- Mix together dates, almonds, walnuts, vanilla and ¼ cup of cocoa powder in a blender or food processor. Mix until they become a dough consistency.
- Spread mixture into a lightly oiled or lined 8×8 baking dish and place in the freezer.
- Mix together bananas, almond butter and the other ¼ of cocoa powder in a blender or food processor.
- Remove first layer from the freezer and spread the second mixture over the top until evenly distributed.
- Freeze for 1-2 hours, remove from freezer and slice.
