Peanut Butter Banana Muffins

I am a peanut butter addict, I will admit it. So whenever I can incorporate it into a bread, or cookie, I am all over it!

With school starting, I wanted to come up with something easy, healthy, and super yummy for those hectic mornings. So I asked my kids what they wanted in a muffin, and of course, they said peanut butter…lol I wanted to add some sort of fruit into the recipe, so I though bananas would be a perfect mix. I grew up eating peanut butter and banana sandwiches, so why not turn it into a muffin?

Serves: 1 dozen
These yummy muffins and moist and delicious, and will disappear fast!
  • 2 cups all-purpose flour
  • ½ cup lightly packed brown sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ cup peanut butter
  • 2 tablespoons vegetable oil
  • 2 eggs
  • ¾ cup milk
  • 2 ripe bananas, mashed
  1. Preheat the oven to 375°F.
  2. In a large bowl, mix together the flour, brown sugar, baking powder and salt.
  3. In a separate bowl, beat together the peanut butter, oil, eggs, milk and bananas.
  4. Mix in dry ingredients until well combined.
  5. Spoon the batter into 12 well greased muffin cups. Bake for 20 to 25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  6. Store in a air tight container in the refrigerator.
