Apple Cinnamon Muffins

I remember going to the Cider Mill as a kid every fall, it was one of my favorite places. So, when fall comes around, I am all for the fresh apples. Having multiple apple trees in my yard, I am always looking for ways to use them up. This week, I decided to whip up some super yummy Apple Cinnamon Muffins. My kids love them, and they are perfect for those mornings when we get a little bit behind schedule.

Apple Cinnamon Muffins

Ingredients
  • 2 cups all-purpose flour
  • ½ cup packed light brown sugar
  • 2 t baking powder
  • 1 t baking soda
  • ½ t salt
  • 1 cup buttermilk
  • ¼ cup vegetable oil
  • 2 t vanilla extract
  • 1 egg
  • 2 cups apples
  • 1 T sugar
  • 1 t ground cinnamon
Instructions
  1. Preheat oven to 400 degrees.
  2. Grease 12 muffin pan cups.
  3. In a large bowl mix flour, brown sugar, baking powder, baking soda and salt.
  4. In a small bowl, whisk together buttermilk, vegetable oil, vanilla extract, and egg.
  5. Stir into flour mixture until just moistened.
  6. Fold in apples.
  7. In a bowl mix sugar and cinnamon.
  8. Spoon batter into muffin tin; sprinkle with cinnamon sugar.
  9. Bake for 25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
