I wanted to make some Oreo Truffles this weekend, but after realizing that I didn’t have enough melting chocolate, I opted to make some Oreo Cheesecake Bars. If you love Oreos and Cheesecake, then watch out, these will get your sweet tooth aching!

Ingredients
  • Crust:
  • 28 Oreo cookies
  • 2 Tablespoons unsalted butter, melted
  • Cheesecake:
  • 20 Oreo Cookies
  • 4 (8-ounce) packages cream cheese, at room temperature
  • 1 cup granulated white sugar
  • 1 cup sour cream, at room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 4 large eggs, at room temperature
Instructions
  1. Preheat oven to 325°F.
  2. Line a 9 x 13-inch pan with foil or parchment paper, leaving a 2-inch overhang on two sides. (This makes it easier to remove and cut into squares.)
  3. Place 28 Oreos in a food processor or crush in a sealed bag using a rolling pin to crush them and process until finely ground.
  4. Add the melted butter, and stir until well combined.
  5. Place the cookie-crumb mixture in the lined pan and, using your fingers, or spatula, press the mixture firmly and evenly into the bottom.
  6. Bake 10 minutes, then remove to a wire cooling rack.
  7. Crush remaining cookies into large pieces.
  8. In a large bowl, beat the cream cheese and sugar until well blended at medium speed, about 3 minutes.
  9. Beat in sour cream, vanilla and salt.
  10. Add the eggs, one at a time, beating well after each.
  11. Gently fold in chopped Oreos with the spatula.
  12. Pour Cheesecake mixture over baked crust.
  13. Bake for 40 minutes, until the filling is set around the edges but still slightly wobbly in the center when you gently shake the pan.
  14. Cool on wire rack for 1 hour.
  15. Place in the refrigerator for 4 hours to chill completely.
  16. After the cheesecake has chilled, lift it from the pan using the overhang or foil or parchment paper.
  17. Slice into squares, and enjoy!
